Ever feel like nothing you eat is satisfying you? There is a remedy and prevention for this; very often an insatiable desire to eat something is actually a lack of certain nutrients. This chicken is stuffed with nourishing protein and cooked in coconut cream, a healthy fat that helps you feel full-much like the complex carbohydrates in sweet potatoes that take longer to digest and help balance blood sugar. Also, adding cayenne pepper and ginger boosts your metabolism. Pine nuts contain a fat that tells your brain when your full, cool huh? Every ingredient counts!

Satisfaction Chicken
Serves: 4, Prep: 10 min. Marinade + 40 minutes, Cook: 1 Hour-30 minutes
5 small Sweet Potatoes 4 Tsp White Balsamic Vinegar or Lemon Juice
2-3 Apples 3 1/2 oz Pine Nuts (dry roasted)
8 Shallots Salt and Pepper
1/3 oz (10g) Fresh Ginger 1 Whole Chicken (Free Range)
20 oz Coconut Cream
1/4 Tsp Cayenne Pepper
Peel and slice the sweet potatoes and apples. Peel the shallots and grate the ginger. Pour the coconut cream into a large oven-safe pot and add the potatoes, apples, whole shallots. Then mix in the ginger, cayenne, vinegar, salt and pepper. Mix well. Place the entire chicken in this bath and let it marinate for 20 minutes on each side.
Preheat oven to 375° F (190° C)
Roast the chicken, breast side up, for 1 hour to up to 1 hour & 30 minutes (based on size of bird)
Golden rules for cooking a whole chicken is 25 minutes per each pound.
Serve sprinkled with the pine nuts.
